chocolate and cilantro

don’t worry, i didn’t make anything that has chocolate and cilantro in the same dish.

we were planning to go hiking in the bitterroot today, but for a variety of reasons we decided to lay low instead. i went on an 8 mile run with a friend this morning, so i don’t feel too guilty for not getting in a hike. it’s been a dreary winter day, complete with some baking, sauce making and cookbook reading. randy just went to pick up a pizza for our 9th of the month pizza date!

i have an insane amount of cookbooks checked out from the local library right now, mostly about whole grains or farm to table sorts of recipes. i plan to cook up some more whole grains tomorrow but a “dark chocolate cake with amaretto” caught my eye today. i’ve been craving chocolate cake for weeks and we had all the ingredients for this recipe, so it had to be tried, right?! how can a chocolate cake with coffee and amaretto go wrong? actually, i used some kalua that friends made us for christmas.

the final product. the flavor is great, but it's a bit dry and crumbly. perhaps i probably left it in the oven too long. sigh. will be great on top of our ice-cream tonight!

these don't have chocolate or cilantro in them, but i made another batch of huckleberry scones yesterday. this time i added raspberries. and a glaze. glad to have this recipe but it's dangerous information!

on to a healthier recipe:

then i found a recipe for a creamy cilantro recipe. confession: there is a bit of mayonnaise in this, but mostly it's greek yogurt, cilantro, lime and lemon juice and spices.

on a totally random note, we are finding the black lentils to be the most difficult grain to find recipes for. randy isn’t a huge lentil fan and i keep showing him pictures of recipes i’d like to try…let’s just say that lentils aren’t overly photogenic. i’ll still try a few of the recipes i found, but if you’ve got a great lentil recipe, please share!
