going veggie for a bit…

i don’t always give something up for lent, but i decided to go vegetarian this year. lent began february 25 (ash wednesday) and goes until easter (april 12). i’ve been interested in giving being a veggie a try and i figured that being intentional about it for lent could be a good opportunity…so i’m not eating meat for now. meat has been more of a temptation than i expected, especially if i’m out to eat with friends. tonight i filled a portabella mushroom with spinach, zuccini squash, pine nuts, dried cranberries, and topped it with gouda cheese. it turned out quite well, if i do say so myself 🙂
